Overnight Oats with Lion's Mane Mushroom Powder

Shroom + Boom Overnight Oats

Serves 1⁠  |  Vegan  |  Gluten free option

1/2 cup rolled oats (gluten free, if required)⁠
1/2 cup plant-based mylk⁠
1/4 cup coconut yoghurt⁠
1/4 apple, grated⁠
1 tbsp walnuts, chopped⁠
1 tsp chia seeds⁠
½ tsp Acacia Blends Lion's Mane mushroom powder (or mushroom of choice⁠)
¼ tsp cinnamon⁠
¼ tsp ginger⁠

Mix all ingredients together in a bowl, cover and refrigerate for 1 hour or overnight (the longer left, the creamier the oats). Serve as is, or top with extra yoghurt, fresh fruit and nut butter - optional but delicious!⁠
