Serves 1 | Vegan | Gluten free option
1/2 cup rolled oats (gluten free, if required)
1/2 cup plant-based mylk
1/4 cup coconut yoghurt
1/4 apple, grated
1 tbsp walnuts, chopped
1 tsp chia seeds
½ tsp Acacia Blends Lion's Mane mushroom powder (or mushroom of choice)
¼ tsp cinnamon
¼ tsp ginger
Mix all ingredients together in a bowl, cover and refrigerate for 1 hour or overnight (the longer left, the creamier the oats). Serve as is, or top with extra yoghurt, fresh fruit and nut butter - optional but delicious!
